Solyanka, Russian cabbage and potato bake

Serves 2-3
Ingredients
4 Medium Potatoes
half a large cabbage (Savoy or January King) or 1 small one, shredded
2 chopped Onions
2 crushed garlic cloves
250ml good cottage cheese
15g butter
1 beaten egg
2 tsp caraway seeds
1 tbsp paprika
50g pumpkin seeds
salt & pepper to taste
Method
- Scrub but don’t peel the potatoes, cut up evenly and boil until they can be mashed.
- Drain and mash with the cottage cheese and beaten egg.
- Sauté the onion and garlic in butter for 5 minutes, the add the cabbage, caraway seeds, salt and pepper. Sauté until the cabbage starts to lose volume about 3 minutes.
- Combine the cabbage mixture with the potatoes, adjust seasoning and transfer to a buttered ovenproof dish.
- Top with pumpkin seeds and paprika and bake uncovered at 373F, 190c, gas mark 5 for about 40 minutes .
- Serve with a green salad or steamed broccoli.
