Solyanka, Russian cabbage and potato bake

Serves 2-3

Ingredients

4 Medium Potatoes

half a large cabbage (Savoy or January King) or 1 small one, shredded

2 chopped Onions

2 crushed garlic cloves

250ml good cottage cheese

15g butter

1 beaten egg

2 tsp caraway seeds

1 tbsp paprika

50g pumpkin seeds

salt & pepper to taste

Method

  1. Scrub but don’t peel the potatoes, cut up evenly and boil until they can be mashed.
  2. Drain and mash with the cottage cheese and beaten egg.
  3. Sauté the onion and garlic in butter for 5 minutes, the add the cabbage, caraway seeds, salt and pepper. Sauté until the cabbage starts to lose volume about 3 minutes.
  4. Combine the cabbage mixture with the potatoes, adjust seasoning and transfer to a buttered ovenproof dish.
  5. Top with pumpkin seeds and paprika and bake uncovered at 373F, 190c, gas mark 5 for about 40 minutes .
  6. Serve with a green salad or steamed broccoli.
